PANIC CHICKEN GINSENG
In a haze of panic buy , you realized you cant go on surviving on biscuits and instant noodles. What you should stock up is frozen meat as well.
Great idea ! That was 2 weeks ago. Ok what do you do with chicken in the freezer now having enchanted yourself for being smart ?
So in my wishful luck, I found this video about Korean Ginseng chicken. Watching it, I asked myself, how hard can it be ?
Soooooo, then in dawn upon me that this could all be a disaster !
there the chicken defrosted, already praying that I don't fowl up
following the steps shown on YouTube, I soaked the glutinous rice for an hour
Red dates (I don't know why the video call them Jujubes, which I always thought was an Indian gummy lozenges)
garlic and for this case water chestnut kauluck.......which was what I needed, some luck.
so after i bath the chicken is a salt wash I started stuffing the chicken
looks right yah. for some reason my mind wandered
and that was where it took a nasty turn!
I couldn't make out which way the chicken had to be laid in the pot and I settled on praying position instead of back lay for the reasons I got a better 3/4 water submersion.
as it started to boil, wifey walked in and said it smells like some thing good which was then I realized I forgot the most important thing !
stuck between the announcement of national reserve aid package and preparing ginseng chicken, I totally forgot to add the ginseng.
I did a post mortem stuffing of the ginseng and hoped for the best......
I got some potato and carrots boiling
and had zuchinni and brocolli stems steamed
I did my usual thing and it was fine
I checked on the chicken and realized the rice inside was not cooked yet.
So I cooked it longer with the chicken snipped already
I transferred chicken into a dish that it deserves and added spring onion and shallots to look more theatherical
once again this amatuer got away with it , but the ginseng could have tasted better if I remember to stuff it in early.
sauce I got after degauzing the pan and adding green chilly and spring onions
light sauce + vinegar + onion + green chilly + raw honey
simple sea salt and cracked pepper
and the guest star that didn't get cooked
the flower head of the organic brocolli
It was a wise advice wifey asked that I added Kauluck which did its job !
