Ugly e Olio
A friend demanded I teach her husband how to make Aglio e Olio (pronounced as "ah-li-oh eh oh-li-oh" ). I didn't have the foggiest idea how was it correctly done. All these while, I tossed the pasta in olive oil and salt. So I found out that an oil with garlic and chilly base was first prepared before dumping in cooked spaghetti.
This version has no chilly because my little one don't really work well with spicy food. I used capsicum to mimic a chilly like nuance to it.
Dice up tri coloured capsicum
Dice up garlic and onions
Stir fry the capsicum and garlic until the garlic turns golden. I don't really like them charred because it promotes sore throat.
Is this even a picture ? anyway, that's the spaghetti being boiled with some salt
Marinate the chicken the way you like. In this case it was basil onion and salt.
The capsicum and garlic in oil is becoming riotous and we need to pop in the spaghetti soon.
Abduct some spaghetti into a cup of water and taste to see if it is the correct texture for eating
Quickly strain the spaghetti when it is ready.
Pop spaghetti into the capsicum and stir fry
Meanwhile, the chicken is being cooked in a separate pan
Boil the potatoes and carrots with some basil and salt
Spaghetti Aglio e Olio made !
Strain the potatoes and carrots
I have left over juice from chicken chop
So I added milk into it to make a bit of gravy or sauce or whatever you call it.
Nothing escapes my fascination for tomatoes
so there ! Spaghetti in beehive hairstyle and everything else
My chicken was over cooked but nobody knows. Spike it with salt and pepper and if possible a tinge of blue cheese here and there!
