Alamak !
I had a sudden penchant for Otah. So this gave an excuse for another no recepie cooking adventure. This Boys Brigade instant noodle cook is attempting some thing no amateur should do.
I checked Wikipedia what was Otah made of:
1. Fish meat
2. Shallots
3. Garlic
4. Ginger
5. Flour
6. Coconut cream
7. Banana leaf
at least for the non spicy version. Alamak, I enchanted myself , how hard can that be?
So I got my ass over to the market to buy the ingredients.
The fish of choice was batang. There have been other favoured fish mentioned being Tengiri, Milk Fish (yuks) and Mackerel. Some how I though Batang sounded like something of some certainty (because i really needed that), I mean isn't Tengiri sounding like something you command troupe with ? Will it smell like a boot ? So, Batang....
Watch a couple of youtube videos and didn't follow the recepie because the portion was too large for 2 person to eat.
OTAH THIS , OTAH THAT, OTAH EVERYWHERE
So I mixed the concoction up with no sense of portion or measurement just expertise from instant noodle experience. I lost the pictures of the process but I have it after steaming it in the oven.
No belly ache ! SAYANG everyone and stay fat !

The raffia string was an added ingredient I am sure was crucial because I forgot to buy toothpicks, plus you don't get to accidentally ingest toothpicks. The use of raffia also put you in the rank of bak chang maker. Definitely made a difference to the taste.
I later pan fried the otah. No pictures though.
I made scrambled eggs with butter and coconut cream and shallots. Sweet aroma everywhere.
For rice, I used short grain specie and I added pandan, garlic and coconut cream
all done with 1 cup of rice (there! a sense of measure) in a tiny Toyomi rice cooker
The result of course was Alamak!
So there ! Alamak on Banana Leaf
After all these years, I finally discovered that banana leaf works with heat applied from whatever.
I lost the urge for Otah and suddenly was in awe over Banana Leaves.

To give a little brightness and freshness to the whole feel instead of fry fry steam steam, I added raw tomato and lemon you make you feel very "i plucked this from the neigbour's garden without permission and see how great it taste anyway" feel. Secretly sprinkle some sea salt to give it an over all MALAYAN appeal.
